Yesterday I was so caught up on my crafts that the day went by and I almost didn't even notice it... when I looked at the clock on the wall, I realized it was getting close to the time my husband gets home from work and everything was a mess!
I had to do something quickly, but I still was so entertained by the crochet rug that I'm working on that I didn't feel like cooking, so I made one of those dishes that I cook when I don't feel like cooking, but still like eating it. Does that make any sense?
Tater tot casserole:
- 1 lb ground beef
- 1 can cream of mushrooms
- 1 1/2 cups (or 1 can) mixed vegetables
- 1 cup cheese (cheddar or mozzarella)
- tater tots
Brown the meat, seasoning it with your favorite spices. Discard the fat. In a 9"x 9" pan, put the meat in the bottom, than add the cream of mushroom soup on top, add a layer of cheese, then a layer of vegetables and finally a layer of tater tots. Bake it for 30 minutes (350F).
