Mini Doughnuts

So we woke up to yet another rainy and gloomy day, to a little whiny little girl that hasn't been sleeping very well because of a stuffed nose. What did we do to make it better? Mini doughnuts! 

Yesterday while I was at Joann's I snagged a couple of chef hats ($1.99 each) thinking it would be fun for the kids to wear when were doing a cooking project together, but I seriously didn't think it would be this quick, but hey, that's OK with me. The kids loved their chef hats and kept them on the whole time, it was so cute, they just melt my heart.


Anyways, I got my little doughnut machine out of the cabinet and used a really simple recipe that doesn't require any special ingredients, just stuff we normally have at home.


Here is the recipe I used:

- 1 cup flour
- 1/2 cup sugar
- 1/2 cup milk
- 1 egg
- 1/4 cup vegetable oil
- 1 tablespoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 cup chocolate chips (optional)
- confectioner sugar (option)

Mix the dry ingredients well, then add the milk, egg and after they are mixed well, add the oil and mix it for a couple more minutes - add the chocolate chips at this point, if you choose to. Drop the mixture into the sprayed doughnut slots and ta-dah!
