Brazilian Carrot Cake Recipe

When I hear "carrot cake" this is the cake I think about, the carrot cake I grew up eating in Brazil, it's a simple recipe and the cake is fresh and tasty. Usually we would add a simple chocolate "frosting" that is made out of sugar, butter and chocolate powder, but since I am trying to lighten things up at least a little bit, I decided to leave to frosting out and just enjoy the cake, which is sweet enough by itself. 

Ingredients:

-1/2 cup vegetable oil
- 3 medium carrots shredded
- 4 eggs
- 2 cups sugar
- 2 1/2 cups flour
- 1 tablespoon baking powder

Preheat your oven 350F (180 C).


Blend the carrots, eggs and oil, add the sugar little gradually, blend everything for about 5 minutes.


Bring your mix to a large bowl, add the flour and once it's well mixed, add the baking powder. Pour your batter into a 9x13 baking pan and bake it for about 40 minutes or until your cake is golden.

PS: I apologize I didn't take pictures of the finished cake, I guess we were too busy and happy eating it that I forgot… next time I make it, I will take pictures and update this post. ;)
